We use extra sweet and aromatic heirloom Bradford or Charleston Gray watermelons to make this fun and delicious jam. Its flavor is reminiscent of a cold wedge of watermelon sprinkled with salt, but you don't have to worry about the juice running down your chin. Try it on a hot buttered biscuits or paired with goat cheese, ricotta, or good quality feta.
Ingredients: Bradford watermelon, sugar, lemon juice, Pomona's pectin, salt.
